The Cusine of Memory

Italian cuisine has a long history, which encompasses the great chefs and the know-how of mothers and grandmothers. It is a sensitive barometer of the customs, traditions and cultures that have developed over the centuries. We believe that when it comes to cooking, “memory” is an appropriate word.

The Cucina della memoria or the “Cuisine of Memory”: that’s what we like to call our cooking. It includes recipes from our own personal experience, together with a constant search for authentic regional Italian traditions. The Trattoria Ponte Rosso has about 300 recipes.

Some are simple, homely dishes, and others are updated versions of elaborate recipes. Occasionally, and with great discretion, we sometimes add our own personal, more creative inventions to those. However, our greatest ambition is to give our customers a “literal” reinterpretation of culinary culture and of its “memory”.
